Upgrade basic roasted chicken thighs with za'atar spice. Za'atar Roasted Chicken is an easy, flavorful weeknight dinner, full of bright and herby Middle Eastern flavors.
Place the oven rack in the middle of the oven, and preheat to 450o F.
While oven is preheating, mix the za'atar, chili flakes, salt, pepper, lemon juice, and olive oil in a small bowl to form a paste.
Place the chicken thighs on a baking sheet, and slather each piece of chicken in the za'atar paste. You will want to make sure that you cover both sides, and get under the skin if you are comfortable. The spice mixture on top of the skin will get crispy in the oven, and the spice mixture under the skin will flavor the meat.
Place the remaining lemon halves on the baking sheet and bake the chicken for 25-40 minutes, or until the juices run clear and a thermometer registers 170o F.
Remove from the oven, and squeeze the hot lemony juice over top to serve.
