
New year, same love of quick, easy, healthyish, yet decadent-seeming dinners. If, like me, you’ve resolved to spend more time in the kitchen in 2019, I can’t think of a better way to kick off the new year than with steak… and wine, naturally. Detox, shmetox.
Rosemary and Balsamic Marinated Flank Steak is the perfect way to kickstart those cooking-related resolutions:
- It’s easy enough to give even the most novice home cooks confidence in the kitchen. Seriously, you can’t mess this one up.
- It’s quick enough for the busiest families and professionals. I’m talking 35 minutes, start to finish, including marinating time (!).
- It’s flavorful enough to quell those takeout cravings. If I can trade in dumplings for home cooked meals, anyone can.

While you can certainly cook this steak on the grill if you have one, I won’t suggest that you go light up the grill in the dead of winter, as I’m not an animal. By popping the steak under the broiler for 7-8 minutes after marinating, you get a simple, hassle-free dinner that’s completely resolution-worthy.

Rosemary and Balsamic Marinated Flank Steak
Forget the grill and cook Rosemary and Balsamic Marinated Steak under the broiler for a simple, winter steak dinner.
Ingredients
- 2 sprigs rosemary, finely chopped
- 3 tbsp balsamic vinegar
- 2 tbsp dijon mustard
- 6 garlic cloves, smashed
- 1 lemon, zested and juiced
- 1/4 cup olive oil
- 1/4 tsp crushed chili flakes optional
- salt & freshly ground pepper optional, the marinade will be flavorful as is, but feel free to add a pinch of salt and pepper for an added boost of flavor
- 1 1/2 lbs flank steak strip steak also works well for this recipe and cooking method
- fresh thyme, as garnish optional
- flaky sea salt, as garnish
Instructions

In a large bowl or freezer bag, combine the chopped rosemary, balsamic, dijon, garlic cloves, lemon zest and juice, olive oil, and chili flakes and salt and pepper if using. Mix well to combine.

Cut the flank steak into 2-4 smaller pieces, depending on the size of your steak. This will make the steak easier to slice down the road. Add the flank steak to the marinade and completely submerge. Allow the steak to marinate for 20 minutes, or up to 2 hours.

5 minutes before you are ready to begin cooking, arrange the oven rack at the top of the oven, and turn the broiler on to High to give the broiler time to preheat. Meanwhile remove the steak pieces from the marinade and wipe off most of the marinade (although I actually prefer to cook the steak with some of the herbs and spices remaining for added flavor). Place the steak on an aluminum foil lined baking sheet or roasting pan.

Broil for 4 minutes on High. Flip the steak pieces, and then broil for another 3 -4 minutes for medium rare.

Remove from the oven and let the steak rest for 10 minutes. To serve, slice against the grain on a bias. Sprinkle with thyme and flaky sea salt.
