Pineapple, Turmeric and Ginger Smoothie

Filled with fruit, greens and warming spices, this Pineapple, Turmeric and Ginger smoothie is a simple and healthy way to start the day.

Over the years, I’ve tinkered with countless smoothie iterations in search of the perfect weekday breakfast. Up until now, I was just kind of mehh about smoothies – they didn’t really do it for me. But This Pineapple, Turmeric and Ginger Smoothie is The One.

The pina colada-esque base of pineapple, banana and coconut is classic for a reason, the greens and chia seeds make it seem healthyish, and the addition of spices makes it warming enough to crave even in the winter.

In order to fully blend the chia seeds, you will need a high speed blender. I haven’t bitten the Vitamix bullet and find this blender to be a perfectly acceptable (and much cheaper) substitute. If silky smooth texture isn’t a priority, any blender will do.

Make a batch of smoothies at night, store in an air tight container in the fridge (mason jars are perfect), and have an easy grab-and-go breakfast in the morning.

Pineapple, Turmeric and Ginger Smoothie

This mixture of sweet fruit, bright greens, and warming spices makes for an easy and healthy breakfast.

Course Breakfast
Prep Time 5 minutes
Servings 2 servings

Ingredients

  • 1 banana
  • 1 handful spinach or kale
  • 1/4 cup shredded coconut
  • 1 cup frozen pineapple
  • 1 tbsp chia seeds (optional)
  • 1/2 tsp turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ginger paste or fresh ginger
  • few ice cubes
  • 1/2 cup unsweetened vanilla almond milk, or milk of choice

Instructions

  1. Add all ingredients to high speed blender, and blend until fully combined.

  2. Enjoy right away, or store in the fridge in an air-tight container and drink within a day. I usually make these the night before, for an easy grab-and-go breakfast.

Get frozen pineapple chunks – so cheap at TJs and easy to throw in. You’ll be a smoothie convert.
